Lemon Pearl Couscous Recipe
  1. Add water to a medium sauce pan and bring to a boil.

    Add couscous, 1 teaspoon olive oil, and salt to the pan.

    Reduce heat to low, cover, and simmer for 8-10 minutes, stirring periodically, until liquid is absorbed.

  2. Add the lemon juice, lemon zest and herbs in and stir well.

  3. Add salt and pepper to taste along with crushed red pepper {optional}.

  4. Serve warm or cold.

  5. Store in an airtight container for up to 4 days.
