Preheat oven to 450 F. Boil sweet potato(s) for 5 minutes to soften. Drain your boiling water, take the potato out and let it cool down a bit before slicing. Slice into desired thickness.
Grab your baking pan and spray the pan with avocado oil. Place sweet potato slices on greased baking pan and spray slices with avocado oil.
Bake sweet potato slices for 45 minutes, flipping halfway through.
Remove slices from the baking pan and top with avocado mash. Top with feta cheese and pomegranate seeds. Serve immediately!
