Mix flour, yeast and salt
Add warm water
Stir until shaggy dough forms
Cover bowl with plastic wrap
Let rise 12-18 hours at room temp
Shape into round loaf
Place in preheated Dutch oven
Bake at 450°F for 30 minutes covered
Uncover and bake 15 more minutes
Use fresh yeast
Longer rise = better flavor
Preheat Dutch oven 30 minutes
Score top before baking
Let cool before slicing
