Mexican Chicken
  1. Dice the bacon into squares about 1 to 1 ½ centimetres in size, fry till the fat is mostly rendered. Drain off the surplus fat.

  2. Add 1 to 2 tablespoons olive oil. Chop the onion fairly finely and add to the bacon.

  3. Chop the sweet pepper and add to the bacon and onion. Fry until the onion and pepper are just cooked.

  4. Dice the chicken and add it and the spices to the mixture and fry until cooked.

  5. Add the beans and dice the tomatoes and add together with the tomato paste. Mix thoroughly and add extra water if too dry. Simmer for 20 to 30 minutes. Serve with tortillas or in taco shells.
