Dried Kombu
  1. Rehydrate kombu overnight in cold water.

  2. Slice into thin strips.

  3. In a pot, add kombu, water, sake, mirin, soy sauces, and sugar.

  4. Simmer for 15–20 minutes until liquid reduces and coats kombu.

  5. Stir in sesame seeds.

  6. Cool and store in airtight container.
