Sauté spinach in a dry skillet over medium heat until wilted (2-3 minutes). Transfer to a clean kitchen towel and squeeze out excess moisture. Chop finely.
In a bowl, combine spinach, feta, Parmesan, garlic, oregano, lemon zest, pepper, and egg (or almond flour). Stir until a sticky dough forms.
Roll heaping tablespoons of dough into small balls. Place on a parchment-lined baking sheet and flatten slightly with a fork.
Preheat oven to 375°F (190°C). Bake 10-12 minutes until edges are crisp and golden.
Heat a nonstick skillet over medium. Cook 2-3 minutes per side until crispy.
Let cool for 5 minutes. Garnish with extra herbs or a squeeze of lemon.
