Warm Multi-layer Enchilada Dip
  1. Preheat oven to 400F

  2. Heat a pan over medium heat, spray with oil, add 1 lb ground beef and 1.5 tbsp taco seasoning, break down continuously until browned and finely minced (about 15 minutes), then remove from heat and set aside

  3. Spread 1 can of mashed refried beans at the base of an oven-safe dish

  4. Add a layer of the cooked ground beef and top with 8 oz enchilada sauce or salsa

  5. Make the queso by processing 16 oz cottage cheese with 2 adobo peppers, 1 tbsp adobo sauce, 2 garlic cloves, 0.5 tbsp onion powder, and 0.5 tbsp paprika until well combined

  6. Add the queso layer on top of the beef and sauce

  7. Top with shredded cheese and bake in the oven for 15 minutes

  8. While baking, make the sauce by processing 3 tbsp mayo, 2 tbsp sour cream or yogurt, juice from 2 limes, large handful of cilantro, 1 small jalapeño pepper, 1 garlic clove, and a pinch of salt until well combined, then taste and adjust seasonings

  9. Remove dip from oven and top with avocado chunks, sliced black olives, diced jalapeño, finely chopped cilantro, and the prepared sauce

  10. Serve and enjoy
