¼ cup liquid honey
2 tablespoons dukkah
8 oz cottage cheese
4 perfectly ripe figs
1¾ oz Pata Negra or quality Spanish ham
Drizzle the honey into a pan over a medium heat and leave
to bubble away for about 3 minutes, or until you've got
a dark golden caramel — please don't be tempted to stir,
taste or touch the mixture, just give the pan a gentle swirl
occasionally. Meanwhile, lightly oil a piece of parchment
paper, sprinkle the dukkah over a 6- x 6-inch area, then
carefully pour the caramel over the top and it will naturally
settle and cool. (To clean the pan effortlessly, pour in 1 inch
of water, pop the lid on and simmer for 5 minutes.) Once
completely cool, snap up the praline and bash in a pestle
and mortar until fine.
Divide the cottage cheese between two plates, quarter and
scatter over the figs, and arrange the Pata Negra in and
around the plate. Scatter over a few good pinches of the
dukkah praline (save the rest in an airtight container for
another day) and drizzle with extra virgin olive oil, to
finish.
