Speedy Fish Chowder With Guinness Treacle Bread
  1. Preheat oven to 180°C/160°C fan

  2. Line a 2lb loaf tin with greaseproof paper

  3. Melt treacle and butter in the microwave

  4. Mix wholemeal flour, porridge oats, bread soda, plain flour, brown sugar, and salt in a bowl

  5. Mix Guinness, buttermilk, treacle, and butter together and add to dry ingredients

  6. Spoon into prepared tin, sprinkle porridge oats on top and bake for 50 minutes

  7. Remove from tin and cool on a wire rack

  8. Heat oil in a saucepan and add leeks with a pinch of salt

  9. Cook leeks, stirring frequently, until soft (about 5 minutes)

  10. Stir in paprika and cook for 1 minute

  11. Add white wine and simmer until almost completely evaporated

  12. Stir in flour and cook for another minute

  13. Add vegetable stock, water, potatoes, and thyme

  14. Simmer until potatoes are tender (about 20 minutes)

  15. Add milk and bring to a simmer

  16. Add fish and peas and cook for 4-5 minutes

  17. Finish with cream and adjust seasoning if necessary
