Baked Salted Fish
  1. Start by rinsing the salted fish, then boil it for about 10 minutes. Drain the water and boil it again for another 10 minutes. Once done, transfer the fish to a bowl and break it into smaller pieces.

  2. In a pan over medium heat, add some oil and then toss in the chopped garlic, sliced yellow onion, long onions, tomatoes, and bell pepper. Stir everything together until well mixed.

  3. Next, add the crushed salted fish, all-purpose seasoning, lemon juice, fresh parsley, tomato paste, fish seasoning (if you're using it), and fresh thyme to the pan. Cook this mixture for about 7 minutes.

  4. For the dough, combine the warm water, yeast, and sugar in a bowl. Mix it well and let it sit aside to activate.

  5. In another bowl, sift together the flour, baking powder, and sugar. Add the softened butter and mix it in before incorporating the yeast mixture.

  6. Make a well in the center of the dry ingredients and pour in the liquid mixture. Stir everything together to form a dough. If the dough feels too dry, add a little water at a time until it becomes soft but not sticky.

  7. Lightly oil a clean bowl, place the dough inside, cover it, and let it rise for 20 minutes.

  8. On a lightly floured surface, roll out the dough and cut out circles. If the circles are too thin, allow them to rise for another 10 minutes.

  9. Heat oil in a pan and fry the dough circles, flipping them as soon as the bottom turns brown to avoid burning.
