Greek Burger Patties With Tzatziki Sauce & Greek Salad
  1. Wash and dry the fresh produce.

  2. Trim off and discard the root ends of the garlic; peel and mince or press the garlic. Transfer ½ of the garlic to a medium bowl (that will hold the ground turkey mixture) and transfer the other ½ to a small bowl (that will hold the tzatziki sauce).

  3. Juice the lemons; add ½ of the juice to the medium bowl and the other ½ to the small bowl.

  4. Trim off and discard the ends of the onions and remove the outer layer; small dice ½ of the onions and transfer to the medium bowl, then thinly slice the other ½ crosswise and transfer to a salad bowl.

  5. Preheat a skillet over medium heat.

  6. To the medium bowl, add the ground turkey, ½ of the feta (save the rest for the salad), Dijon, oregano, salt, and pepper; mix until well combined. Form the mixture into 12 patties and place on a plate.

  7. Once the skillet is hot, add olive oil and swirl to coat the bottom.

  8. Place 4 of the patties in the skillet and cook until cooked through and golden brown, 4 to 6 minutes per side. Once done, transfer to a plate. Repeat with the remaining patties.

  9. Trim off and discard the ends of the cucumbers; coarsely grate ¾ of one cucumber and add to the small bowl with the garlic and lemon juice, then quarter the remaining 2 ¼ cucumbers lengthwise and cut crosswise into ¼-inch-thick pieces. Add to the salad bowl.

  10. Halve the grape tomatoes and add to the salad bowl.

  11. To the salad bowl, add the olives, olive oil, oregano, salt, and pepper; toss to coat.

  12. Add yogurt to the bowl with the garlic, lemon juice, and cucumber; season with salt and pepper and mix together.

  13. To serve, divide the salad and burger patties between plates; top the salad with the remaining feta and serve the tzatziki sauce with the patties. Enjoy!
