Wash and dry the fresh produce.
Trim off and discard the root ends of the garlic; peel and mince or press the garlic. Transfer ½ of the garlic to a medium bowl (that will hold the ground turkey mixture) and transfer the other ½ to a small bowl (that will hold the tzatziki sauce).
Juice the lemons; add ½ of the juice to the medium bowl and the other ½ to the small bowl.
Trim off and discard the ends of the onions and remove the outer layer; small dice ½ of the onions and transfer to the medium bowl, then thinly slice the other ½ crosswise and transfer to a salad bowl.
Preheat a skillet over medium heat.
To the medium bowl, add the ground turkey, ½ of the feta (save the rest for the salad), Dijon, oregano, salt, and pepper; mix until well combined. Form the mixture into 12 patties and place on a plate.
Once the skillet is hot, add olive oil and swirl to coat the bottom.
Place 4 of the patties in the skillet and cook until cooked through and golden brown, 4 to 6 minutes per side. Once done, transfer to a plate. Repeat with the remaining patties.
Trim off and discard the ends of the cucumbers; coarsely grate ¾ of one cucumber and add to the small bowl with the garlic and lemon juice, then quarter the remaining 2 ¼ cucumbers lengthwise and cut crosswise into ¼-inch-thick pieces. Add to the salad bowl.
Halve the grape tomatoes and add to the salad bowl.
To the salad bowl, add the olives, olive oil, oregano, salt, and pepper; toss to coat.
Add yogurt to the bowl with the garlic, lemon juice, and cucumber; season with salt and pepper and mix together.
To serve, divide the salad and burger patties between plates; top the salad with the remaining feta and serve the tzatziki sauce with the patties. Enjoy!
