Boil potatoes
Smash potatoes in muffin pan
Add oil, salt, pepper, garlic powder and paprika to mashed potatoes
Put in the oven at 220°C for approximately 5 minutes or until crispy
Blend cottage cheese, eggs, salt and pepper together
Pour egg mixture into the mashed potato base
Add bacon, spring onion, capsicum, and parmesan cheese on top
Put back into the oven for another approximately 10 minutes or until fully cooked
Allow a few minutes to cool before removing from pan
Store in the fridge or freezer
