New Orleans Calas
  1. Preheat fire to medium heat.

  2. Add whole milk, warm water, sugar, ground nutmeg, salt, and cooked rice into a pot. Let simmer.

  3. Transfer rice mixture to a bowl, add vanilla extract and butter extract. Let cool.

  4. Add egg, instant yeast, and flour to the rice mixture. Cover and let sit.

  5. Add more flour to the mixture.

  6. Heat oil in a pot or skillet to 350 degrees F.

  7. Scoop rice batter into hot oil and fry until golden brown.

  8. Remove calas and let cool on a rack.

  9. Sprinkle confectioners’ sugar on top of the calas before serving.
