Soft & Chewy Chocolate Chip Cookies (no-chill Recipe!)
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. In a large bowl, beat the softened butter, brown sugar, & granulated sugar together for 2–3 minutes until light and fluffy. This step is what gives these cookies their soft interior.

  3. Add in the eggs and vanilla extract. Beat again for 1–2 minutes until smooth and creamy.

  4. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.

  5. Add the dry ingredients into the wet and fold gently until almost combined.

  6. Add the chocolate chips and fold just until evenly distributed.

  7. Scoop the dough using a medium cookie scoop and place on your baking sheet.

  8. Bake at 350°F for 8–10 minutes. You want to pull them out when the edges look set but the centers still look soft — trust me, this is what keeps them chewy.

  9. Let the cookies cool on the sheet pan for 10 minutes. They continue to bake on the hot pan and set perfectly.

  10. Transfer to a wire rack or enjoy warm!
