Mexican Potatoes
  1. Preheat the oven to 400 degrees F / 200 degrees C.

  2. Line large baking tray with parchment paper then add the potatoes, onion and peppers.

  3. In a small bowl, combine the olive oil with the other seasoning ingredients. Whisk or stir to mix well.

  4. Drizzle the oil mixture on the vegetables and toss to coat before spreading the vegetables evenly on the baking sheet.

  5. Place the tray on the middle rack of the oven and bake for 35-40 minutes or until the potatoes are fork tender.
