Tofu Satay
  1. Start by roughly chopping all of the marinade ingredients, just to give the blender a helping hand. Blitz everything up until you have a smooth paste.

  2. Cut the tofu into bite size chunks and toss in the marinade well.

  3. Thread the chunks evenly onto 4 skewers and leave to marinate while you move onto making the dipping sauce.

  4. For the dipping sauce, simply whisk together all ingredients until smooth.

  5. Put a pan on a medium-high heat with a splash of vegetable oil. Fry the skewers for 2-3 mins each side until deeply golden - it's nice to let them catch a little bit for a nice caramelised, lightly charred/bbq flavour.

  6. Serve the skewers alongside the dipping sauce with some additional crushed peanuts and some crunchy salad leaves or cucumber slices.
