Place the nest of noodles into a bowl and cover with boiling water, set aside to cook for 18 minutes.
Thinly the onion into ½ cm slices.
Season your wok with oil on medium-high heat by pouring a ladle of veg oil into the wok, swirl around then pour away and set aside for the next step.
Add 2 tbsp veg oil to your wok with the onion and stir fry for 30 seconds on medium-high heat.
Add the cooked noodles and stir fry for another 30 seconds.
Then add the beansprouts and cook for another 30 seconds.
Add the seasonings and stir fry for a minute until the noodles are evenly coated in soy sauce and the wok is dry.
Serve with sliced spring onions and chilli oil.
