Unloaf for the win! Mixed at 8:00pm last night, left covered on counter, put in cold oven at 9:40 this morning.

My Method:
Weigh 650 grams flour
Add 15 grams salt, stir it in.
Mix 165 grams cold starter and 400 grams water. When it’s thinned, add to flour/salt. Stir until a shaggy dough forms. Dump onto floured counter/ silicone mat and knead into a smooth ball, 3-5 mins at most. I floured my hands a few times if dough was sticking. Plop ball into Tupperware bowl and put lid on. Let sit on counter overnight. In the morning it will be pushing the lid off. Again, I plopped it back onto mat and shaped into a tight ball. ( no flattening, rolling, coiling ect.) I put that onto a half sheet of parchment and put it straight into a Dutch oven. Put lid on and let rest one hour. Remove lid, score, put lid on and put cold Dutch oven straight into cold oven. Turn oven on bake at 450*, set timer for 60 minutes.
When timer goes off, remove lid, lower oven temp to 425*. Check bread temp, you want 210*. Set timer for 10 minutes if needed.
