Tres Leches Pancakes
  1. In a large bowl, mix the flour, sugar and baking powder together.

  2. In a separate bowl or jug, mix together the eggs, vanilla, milk, oil and yoghurt.

  3. Pour these wet ingredients into the dry and mix just until you can't see any flour any more, it is ok if the batter is lumpy.

  4. You want to cook these on a non-stick pan that is on low heat. I like to pipe the batter into the pan, but you could just use a spoon.

  5. Add some dollops of batter on to the pan, then add a lid over them. This just helps the centre cook fully.

  6. After about a minute, lift the bottom of the pancake up a little. If it is a golden brown colour flip it over and cook the other side until this side is golden brown too.

  7. To make this mixture, just mix the 3 ingredients together.

  8. Leave this in the fridge until you're ready to use it.

  9. To make a stack of pancakes, place one pancake down on a plate. Poke a few holes in this, then spoon some of the milk mixture onto it.

  10. Once the milk has soaked into the pancake, add your filling of choice.

  11. Keep repeating these 2 steps until the pancake stack is as tall as you want and then that is it, enjoy!
