Preheat oven to 375 F. Slice tortillas into four equal sized quarters. Lightly spray a muffin tin with non-stick cooking spray.
Layer two tortilla quarters in each cavity of the muffin tin, ensuring the “point” of each triangle is pointing towards the inside of the cavity. Gently press the tortillas down. Bake tortillas for about 5-7 minutes, until they begin to turn golden brown.
While tortillas are cooking, add oil to a pan over medium-high heat. Once hot, add ground turkey and Italian spice blend. Cook until turkey is no longer pink in colour. Drain any excess oil. Allow to cool.
To a large mixing bowl, add cooked turkey, 1 cup cheese, diced bell peppers, spinach and marinara sauce. Mix to combine.
Add about ⅓ cup of the turkey mixture into each tortilla cup. Gently pressing down. Top each cup with the remaining mozzarella cheese and a few slices of pepperoni. Bake for about 15 minutes.
