Easy Chickpea Cookies
  1. Blend the chickpeas in a food processor until smooth. Add the peanut butter and maple syrup and blend until there are no clumps or grit.

  2. Let the batter cool a bit before adding the chocolate chips.

  3. Stir in the baking soda and baking powder.

  4. Flatten the dough with your hands before baking.

  5. Bake at 350°F for 12-14 minutes (may need to cook longer at high altitude).
