Thai Beef Rice Paper Rolls With Creamy Curry Satay
  1. Make the lemongrass satay sauce by adding ginger, garlic, onion, red chillies, lemongrass, Makrut lime leaf, curry powder, peanuts, coconut milk, brown sugar, soy sauce, fish sauce and tamarind paste to a cooking blender

  2. Blend until smooth and fragrant

  3. Prepare the sticky lemongrass beef filling by combining lime juice, fish sauce, brown sugar and tamarind paste

  4. Add beef mince, minced garlic, finely chopped lemongrass, chilli flakes, soy sauce and hoisin sauce to the mixture

  5. Mix until well combined

  6. Add lime juice to the beef filling

  7. Prepare rice paper rolls by softening rice paper sheets

  8. Fill each rice paper with cucumber matchsticks, pickled carrots, mint leaves, Vietnamese mint leaves and peanuts

  9. Add a portion of the beef filling to each roll

  10. Wrap tightly and pan-fry until the rice paper turns crisp and bubbly

  11. Serve with the lemongrass satay sauce on the side

  12. Garnish with chopped red chillies, chopped mint and toasted sesame seeds if desired
