Zest the lemons, reserving the main parts of the lemons. Massage the zest and sugar together.
Put 2 cups of water into a pot and add the zest and sugar mixture and bring to a boil. Remove from the heat and let it cool slightly. Strain the lemon syrup with a fine mesh strainer, and optionally again with coffee filter if you want it perfectly clear.
In a glass, add the juice of one lemon, muddled mint (if using), ice, some of the lemon syrup, then top it up with cold water to taste. Mix and enjoy.
