TOPPING
In a large bowl, mix all of the bake ingredients except the bread : eggs, milk, heavy whipping cream, sugar, vanilla extract, and almond extract.
Tear or cut the bread into 1" cubes. Toss the cubes in the wet mixture coating the bread thoroughly. Cover & refrigerate overnight.
The next morning preheat the oven to 350 degrees.
Mix the dry topping ingredients in a bowl : flour, brown sugar, cinnamon, and salt.
Add butter to the mixture in small ¼" cubes and mix in until chunky and crumbly
Pull the bowl with the bread & bake mixture from the fridge. Scoop the soaked bread cubes into a 9x13 pan leaving behind the excess liquid.
Sprinkle crumbly topping mixture evenly over the bread.
Bake at 350 for 50 minutes.
NOTE - great for freezing. Also modification friendly if looking to add frozen berries or cooked maple sausage.
