Garlic Mushroom, Onion, Parsley & Mozzarella Flatbread (schiacciata)
  1. Preheat your oven to 230°C / 450°F.

  2. Add the flour, water, salt and olive oil to a bowl and mix until a dough forms.

  3. Knead until smooth, then let the dough rest for 10 minutes.

  4. Divide the dough into 2 pieces and roll both out very thinly.

  5. Place the first layer onto a well-oiled baking tray.

  6. Sprinkle the semolina onto the base to prevent it getting soggy

  7. Add the filling ingredients evenly over the top

  8. Cover with the second layer of dough and press the edges together firmly to seal.

  9. Brush the top generously with olive oil and prick all over with a fork.

  10. Bake for 20-30 minutes or until crisp and golden on top and bottom.

  11. Serve hot or at room temperature and enjoy!
