Blueberry Crumble Muffins
  1. Preheat your oven to 200C/180C fan.

  2. For the crumble mix, add all the ingredients into a bowl and mix to form a chunky crumble. Chill

  3. For the muffin mix, into a bowl, add the butter and sugar and mix until soft and pale in colour.

  4. To this, add the egg, almond, and vanilla essence. Mix to combine.

  5. Sieve in the flour, salt, and baking powder and add the milk.

  6. Mix to remove lumps and add the blueberries.

  7. Divide between the 6 lined paper cases.

  8. Sprinkle the crumble over the top and bake in the preheated oven for 25-30minutes or until a skewer inserted comes out clean.

  9. Allow to cool in the tin for 10 minutes before eating.
