Butter Smash Burgers
  1. Preheat a flat-top grill or griddle to medium-high heat on one side and low heat on the other.

  2. Make the burger sauce: In a bowl, combine the mayonnaise, ketchup, BBQ sauce, pickle juice, and diced shallot. Stir until smooth and refrigerate until ready to use.

  3. Thinly slice the onion and set aside.

  4. Add the grated frozen butter to the ground beef and gently mix until evenly distributed.

  5. Divide the beef into portions slightly larger than golf balls and shape into loose balls.

  6. Place the beef balls on the hot griddle and top each with a small pile of sliced onions.

  7. Smash the burgers thin using a grill press or sturdy spatula. Season with your preferred burger seasoning and drizzle each patty with yellow mustard.

  8. While the burgers cook, toast the buns on the cooler side of the griddle.

  9. Cook for 4 to 5 minutes, until a crust forms on the bottom. Flip the burgers, reduce the heat to low, and top with cheese.

  10. Cook for about 1 minute more, or until the cheese is melted.

  11. Transfer the burgers to the toasted buns and top with the burger sauce.

  12. Serve immediately.
