Heat the olive oil in a pan over medium heat. Add the shallot, carrots, and chickpeas.
Add salt, pepper, turmeric, and coriander. Stir and cook for about 3 minutes.
Add the rice and dill. Mix well until everything is coated and turns a beautiful golden color.
Pour in the boiling water, stir, and cook on high heat for 1 minute.
Lower the heat, cover, and cook for 20 minutes. Fluff with a fork.
Small tip: If you want extra fluffy rice, turn off the heat and let it sit covered for 10 minutes before fluffing.
