Rhubarb & Feta Hand Pies
Ingredients:
For the filling:
1 ½ cups rhubarb, chopped into ½-inch pieces
1 tablespoon olive oil
1 tablespoon honey (or more to taste)
1 small onion, thinly sliced
1 tablespoon butter
½ cup crumbled feta cheese
1 tablespoon fresh thyme (optional)
Salt and pepper to taste
For the pastry:
1 package (about 14 oz) refrigerated puff pastry or pie dough (or homemade if preferred)
1 egg, beaten (for egg wash)
Instructions:
Prepare the filling:
Roast the rhubarb: Preheat your oven to 375°F (190°C). Toss the rhubarb pieces with olive oil and honey. Spread them on a baking sheet in a single layer and roast for about 15 minutes, until softened and slightly caramelized. Let cool slightly.
Caramelize the onions: In a pan, melt the butter over medium heat. Add the sliced onions, a pinch of salt, and cook slowly, stirring frequently, for 15-20 minutes until golden brown and caramelized.
Combine the filling ingredients:
In a bowl, combine the roasted rhubarb, caramelized onions, crumbled feta, and fresh thyme (if using). Season with salt and pepper to taste. Mix gently to combine.
Prepare the hand pies:
Roll out the puff pastry or pie dough on a lightly floured surface. If using puff pastry, cut the dough into 6-8 squares or circles (depending on your preference for pie size).
Spoon a small amount of the filling mixture onto the center of each dough square or circle, leaving a border around the edges for sealing.
Fold the dough over the filling to create a half-moon shape or a sealed rectangle. Press the edges together with a fork to seal, then brush the tops of the pies with the beaten egg for a golden, glossy finish.
Bake the hand pies:
Preheat your oven to 375°F (190°C) (if not already done).
Arrange the hand pies on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the pastry is golden and crispy, and the filling is bubbling slightly.
Serve:
Allow the hand pies to cool slightly before serving. They are delicious warm or at room temperature.
