Combine chopped Medjool dates, crunchy peanut butter, plant-based protein powder, ground almonds, and milled chia seeds in a bowl
Add maple syrup and water to the mixture and stir until well combined
Press the mixture firmly into a lined baking tray
Melt the dark chocolate and spread over the top of the mixture
Add optional toppings such as pistachios, goji berries, coconut flakes, or cacao nibs if desired
Refrigerate or freeze until set
Cut into 12 bars and store in the freezer for quick snacks
