Preheat the oven to 200C degrees
Prep all the vegetables
In a bowl, add the butter, cheddar, garlic, and thyme leaves
Use a fork to squish it all together until spreadable
Stir in the tomato pesto
Add a pinch of salt and lots of pepper to the butter mixture
Add the chopped leeks and sprouts to a bowl and toss well in the olive oil
Season the leeks and sprouts with salt and pepper
Lay out the puff pastry onto baking paper dusted with flour
Gently prod the pastry over with a fork
Spoon the butter base over the pastry so that it goes over the ledges
Top with the greens and a last bit of pepper
Place into the middle/bottom of the oven for 5 minutes
Turn down to 190C and bake for 15 minutes or until the pastry has puffed up and the greens are cooked on top
Tear over the burrata so it is scattered about
Add the lemon zest on the burrata
Serve warm
