Apple Cider Donuts
  1. Reduce apple cider from 500 g → 160 g, use 80 g in batter (reduce to a third)

  2. Whisk flour + baking powder+ baking soda + salt + spices

  3. Mix sugars + egg + yolk → add yogurt, discard, butter, oil, vanilla, cider

  4. Fold dry into wet, rest 2-3 min

  5. Pipe into greased donut pans, 45-55 g each

  6. Bake 12 min at 350 °F, cool 5 min, then transfer to rack

  7. mix powdered sugar + maple syrup + milk to make the glaze then dip or pour over
