For the salmon bites: Toss the salmon with the oil, vinegar, garlic powder, paprika, 1 teaspoon of salt and several grinds of black pepper in a large bowl until well combined. Cover and refrigerate for at least 30 minutes and up to 1 hour.
For the yum yum sauce: Meanwhile, whisk together the mayonnaise, ketchup, mirin, vinegar, garlic powder, onion powder, paprika, cayenne, a pinch of salt and several grinds of black pepper in a small bowl until smooth and combined. Cover and refrigerate until ready to serve.
Add the salmon to a 6-quart air fryer, leaving some space between each piece to promote even cooking. Cook at 400 degrees F until the salmon is just cooked through and golden at the edges, 5 to 6 minutes (see Cook’s Note).
Serve the salmon bites with the yum yum sauce for dipping or on top of a rice bowl with mixed greens, sliced cucumber and a drizzle of the yum yum sauce.
