Cook pasta al dente, according to package directions. Always err on the side of underdone since it will continue to cook and soak up liquid.
While the pasta cooks, add all remaining ingredients (with the exception of HALF of the sharp cheddar) to a blender. Blend until smooth.
Heat a deep skillet or pot over medium heat and pour the blended sauce into the preheated pan. Cook the sauce for about 5 minutes, bringing it just to a simmer and stirring often, then turn off the heat and add your cooked/drained pasta and combine well.
Stir in remaining cheddar cheese until warm and melty.
Finish with extra salt and pepper to taste, and serve immediately.
