Stir together the flour, yeast and salt.
Add the water and stir until a dough ball forms (it’ll look scrappy and weird.)
Cover with plastic wrap and a clean kitchen towel and let it sit at room temp for 12-18 hours. Store in a draft free area.
Remove, shape into a dough ball with a little bit of flour.
Preheat oven to 450 and place a 6 quart Dutch oven in the oven to preheat.
When oven is preheated place dough on a piece of parchment paper and put it in the Dutch oven.
Cover and cook for 30 minutes
Remove the lid and cook an additional 10-15 minutes until browned and beautiful.
