Honey Mustard Smashed Potato Salad
  1. Preheat oven to 180 degrees. boil the potatoes for 15 mins in salted water

  2. Add to baking tray and squash with the back of a glass. No need to be perfect with them. drizzle with plentyyyy of oil and honey and seasonings stated above then pop in preheated oven for 45-60 mins. Turning occasionally

  3. Add all the honey mustard sauce ingredients to a bowl and mix. Ladle it onto a plate.

  4. Remove potatoes, roughly chop them up and add on top of the sauce. Top with more parmesan and fresh herbs and enjoy!
