Busygirl Meal Prep Salad
  1. Cook the quinoa according to package instructions and set aside.

  2. Preheat the oven to 400°F (200°C) and line baking sheet with parchment paper.

  3. To the lined baking sheet, add the sweet potatoes and tofu. Drizzle with the olive oil and season with the salt, pepper, and garlic powder. Bake for 20 minutes or until the sweet potato is fork-tender and golden. Remove from the oven and set aside.

  4. To a large bowl, add the kale, carrots, and vinaigrette, and toss to combine to make a slaw.

  5. Into four airtight containers, evenly portion the roasted tofu and potatoes, slaw, and quinoa.

  6. Enjoy all week long! Happy prepping!
