Preheat your oven to 350F (180C) degrees. Line your baking sheets with parchment paper or silicone baking mats.
In a large bowl, beat together the softened butter and sugars until fluffy.
Beat in the egg, vanilla extract, and honey, scraping down the sides of the bowl as needed.
In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
Gradually add the flour mixture into the butter mixture, carefully beating them together.
Gently fold in the quick oats and old-fashioned oats.
Form the dough into balls, measuring about 1 to 1.5 tablespoons, and place them about 2 inches apart on the prepared baking sheets.
Bake one cookie sheet at a time in the middle rack for about 10-13 minutes, or until the tops look just set.
Cool the cookies on the baking sheet for at least 10 minutes before transferring them to a wire cooling rack.
