Feta ‘n’ Chive Muffins
  1. In a large bowl, combine the flour, baking powder and salt.

  2. In another bowl, combine the eggs, milk and butter; stir into dry ingredients just until moistened.

  3. Fold in the feta cheese and chives.

  4. Fill 12 greased or paper-lined muffin cups two-thirds full.

  5. Bake at 400° for 18-22 minutes or until a toothpick inserted in the center comes out clean.

  6. Cool for 5 minutes before removing from pan to a wire rack.

  7. Serve warm. Refrigerate leftovers.
