Heat sesame oil in a pot.
Chop the shallots and add them to the pot.
Mince the garlic and add it to the pot.
Peel the ginger and add it to the pot.
Incorporate the wakame into the pot.
Add the dried mushrooms, including shiitake and porcini, to the pot.
Stir in the oyster mushrooms.
Add the chestnut mushrooms to the mixture.
Pour in filtered water and bring it to a boil.
Lower the heat and let it simmer for about an hour.
Zest a lemon and mix it into the pot.
Stir in the miso paste for added gut health.
Top with chopped scallions just before serving.
