Honey Harissa Roasted Eggplant
  1. Preheat oven to 450 degrees.

  2. In a small bowl whisk together the olive oil, honey, harissa, garlic, cumin, sea salt and pepper.

  3. Score eggplant with knife and brush with honey harissa mixture to coat.

  4. Roast eggplant on baking sheet until golden, about 15-20 minutes.

  5. Sprinkle with mint and serve warm.
