3-ingredient Shortbread Cookies
  1. Line a baking sheet with parchment paper.

  2. In a stand mixer with a paddle attachment, add the soft, room-temperature butter and the powdered sugar. Beat until smooth.

  3. Add the flour and mix to combine until the dough comes together.

  4. If adding mix-ins, stir them into the dough until evenly distributed.

  5. Transfer the dough to a lightly floured surface and roll out to about ½-inch thickness.

  6. Cut into desired shapes and transfer to the prepared baking sheet.

  7. Chill the cookies in the fridge for at least 45 minutes or in the freezer for 20 minutes.

  8. Preheat the oven to 350°F (180°C).

  9. Bake for 12 to 15 minutes or until lightly golden. Let rest on the baking sheet for 15 minutes before transferring to a wire rack to cool completely.
