Jalapeños & Cheddar Biscuits
  1. Grate cold butter and put it in the freezer while you move on to the dry ingredients.

  2. Mix together the flour, baking powder, salt, jalapeños and cheese, and mix together combine.

  3. Add the frozen butter and stir to combine.

  4. Add the buttermilk in two batches, stirring to make sure it is absorbed and evenly distributed.

  5. Turn out the dough onto a floured surface and roll it out into a rectangle away from you. Fold the dough over itself lengthwise towards you.

  6. Turn the dough 90 degrees and roll it into a rectangle away from you, fold it lengthwise over itself towards you, and repeat this 3 to 4 more times.

  7. Shape the dough into a rectangle about an inch thick and cut into 8 even pieces. Brush each piece with egg wash, top with a bit more cheese, then place onto a baking sheet.

  8. Bake at 375F for 35 mins.
