Roast the tomatillos, onion, garlic cloves, & jalapeños using your preferred method. 450 degrees in the oven until roasted & blistering
Blend the roasted vegetables along with ½ c water, salt (or chicken bouillon) to taste, and cilantro.
Chop green onions in half and 8 bacon slices into bite size pieces.
Cook the bacon in the pan for 3-4 minutes. Then add the green onions and cook for an additional 4 minutes or until they are cooked through.
Remove the green onions and bacon pieces. In the same pan, brown the meat for 5-6 minutes. Add salt & pepper to taste.
Bring the heat down, add the green salsa and 2 c of beef broth. Cover &cook for 10 minutes
Add the bacon and green onions back into the pot with a handful of cilantro. Cover and cook for an additional 10 minutes.
Scoop meat & beans into bowls & top with jugo. Garnish with avocado, more onion, & cilantro.
