Preheat oven to 325°F. Line a large sheet pan with parchment paper.
In a large bowl whisk together 6 tbsp coconut oil, melted, ⅓ cup maple syrup, 1 tsp vanilla extract, 1 tsp cinnamon, ¼ tsp cardamom, and 1 tsp salt.
Add 4 cup old fashioned rolled oats, ½ cup pumpkin seeds, and ½ cup walnuts, roughly chopped to the bowl and stir well until everything is evenly coated.
Spread evenly onto the prepared sheet pan in a thin, even layer.
Bake for 15 minutes, then stir and spread back out evenly.
Bake for another 10-15 minutes until golden. Watch closely the last 5 minutes — it goes fast.
Remove from oven and immediately press down firmly with a spatula. Do not stir. Let cool completely undisturbed — this is what creates the clusters.
Once fully cool, break into clusters and store in an airtight container.
