Stracotto (italian Pot Roast)
  1. Preheat the oven to 275 degrees

  2. Dice and cook the bacon in a large cast iron pan. Once cooked, remove the bacon and place in a bowl. Leave the grease in the pan

  3. Season large chunks of chuck roast with salt and pepper. Sear both sides of the chuck roast in the bacon grease. Once finished, remove meat and set it aside

  4. Sweat down vegetables in the remaining grease for 7-10 minutes. Add seasoning, beef broth, crushed tomatoes, meat, and fresh thyme and rosemary. Incorporate all the ingredients together

  5. Place a lid on the pan and place in the oven

  6. Cook for 4-5 hours

  7. Remove from the oven and serve with mashed potatoes, pasta, or polenta

  8. Enjoy
