Wash the potatoes and pat dry.
Rub the potatoes with oil and sprinkle with salt.
Place potatoes on a parchment-lined baking sheet.
Bake 45-60 minutes or until fork-tender.
Remove baking sheet from the oven and serve.
Leftovers may be stored in an airtight container in the fridge for up to 4 days.
