Preheat oven to 375.
Rub olive oil over cut sides of each potato and sprinkle evenly with 1 teaspoon salt and ½ teaspoon pepper.
Place potatoes, cut side down on a parchment-lined baking sheet and cook 45 minutes or until browned around the edges.
Let stand, cut side down 10-15 minutes before serving.
Warm barbecue til heated throughout.
Top each potato evenly with pork, cheese, onion and pickles.
Combine mayonnaise with remaining salt and pepper and remaining ingredients and whisk until well blended.
Serve sauce drizzled over potatoes.
