Crispy Chicken Shawarma
  1. Cut chicken into this pieces and add to a medium bowl.

  2. Mix garlic, pepper or tomato paste, yogurt, vinegar or lemon juice, oil, and spices into a food processor. Blend and add to the chicken, mixing well. Marinate for a few hours or overnight.

  3. Pre-heat oven to a high broil.

  4. In a pan, heat oil and add tomato paste. Once foamy, ketchup, cayenne, and water. Salt to taste. Set aside.

  5. Heat a dry sheet pan in the oven. Once hot, add beef tallow or oil and spread chicken in a thin layer. Bake for 10-15 minuets.

  6. Assemble on pita with toum, chicken, pickles and other desired veg.

  7. Please seem side down on pan drippings and paint on red sauce. Flip and baste all side.

  8. Enjoy!
