Cut chicken into this pieces and add to a medium bowl.
Mix garlic, pepper or tomato paste, yogurt, vinegar or lemon juice, oil, and spices into a food processor. Blend and add to the chicken, mixing well. Marinate for a few hours or overnight.
Pre-heat oven to a high broil.
In a pan, heat oil and add tomato paste. Once foamy, ketchup, cayenne, and water. Salt to taste. Set aside.
Heat a dry sheet pan in the oven. Once hot, add beef tallow or oil and spread chicken in a thin layer. Bake for 10-15 minuets.
Assemble on pita with toum, chicken, pickles and other desired veg.
Please seem side down on pan drippings and paint on red sauce. Flip and baste all side.
