Dutch Oven Mint Chocolate Cookie Bars
  1. Whisk together the softened butter and sugar, then add in the egg. Whisk for a couple of minutes until the mixture is creamy and lighter in color. Mix in the vanilla extract.

  2. In a separate bowl, mix the flour and baking soda, then add it into the wet ingredients and mix until the dough forms.

  3. Lastly, fold in the crushed cookies and m&m's. Roll the dough in plastic wrap and store it in the cooler until you're ready to bake at camp. Cookie dough can be made up to 2 days in advance of when you plan to bake it.

  4. Heat your briquettes in a chimney starter.

  5. Line a 10-inch dutch oven with parchment paper and press the cookie dough evenly inside.

  6. Cover with the lid and bake at 350°F for 14-16 minutes in the dutch oven. Do not overbake these cookies or they become dry.

  7. Once done, remove the heat from the dutch oven, open the lid, and let the cookie cool for at least 15 minutes before slicing it into bars. Enjoy!
